Cheesy Flavor Roasted Vegetables

Ingredients
- 2 big slices from the middle of a cauliflower
- 1/2 red bell pepper
- 1/2 yellow bell pepper
- 1/2 red onion
- 1 cup mushroom
- 1 carrot
- 1 cup broccoli
- 1 cup cherry tomatoes
- Optional: cooked quinoa
- seasonings for coating
- 2 tbs nutritional yeast
- 1/2 tsp garlic powder
- 1/2 tsp oregano
- 1/4 cup olive oil
- 1 tsp salt
Instructions
- Heat the oven to 425°F.
- Pat the vegetables with a drying cloth, it will better roast when dry.
- Cut the vegetables into even pieces.
- Mix the seasoning: In a small bowl, add all the ingredients and stir until well combined.
- Spread the vegetable on a baking sheet in a baking tray or Pyrex.
- Drizzle the seasoned oil and cover all the vegetables with a brush.
- Transfer the vegetables to a serving dish. Eat hot!
