Curry does not necessarily refer to any particular flavor; rather, it simply means “sauce” or “gravy.” There are as many versions of curry as there are cooks in India, but each one essentially is a heavily spiced broth with a protein or vegetables. How hot you want this dish depends on your curry powder, so be sure to check you have a mild version if you don’t like spicy foods.
For this vegan version, you’ll just need to chop the veggies in the morning, dump into your slow cooker before you head out, and then let cook all day. Enjoy a cozy bowl over rice or with flatbread.
Slow Cooker Cauliflower Curry
Ingredients
- 1 large head cauliflower cut into florets
- 2 large carrots chopped
- 1 cup green beans chopped
- ½ large onion chopped
- 2 cloves garlic minced
- 1 cup canned coconut milk
- 2 teaspoons curry powder
- 1 teaspoon paprika
- 1 teaspoon salt
- 1 teaspoon garam marsala
- 1 teaspoon red pepper flakes optional
- 2 tablespoons coconut flour
Instructions
- In a slow cooker, add cauliflower florets, carrots, green beans, onion and garlic and mix well.
- In a large mixing bowl, whisk together coconut milk, curry powder, paprika, salt, garam masala and red pepper flakes. Pour the mixture over the vegetables. Sprinkle over the coconut flour and stir to make sure it is fully incorporated.
- Cook on low for 8 hours or high for 5 hours, until the mixture is very thick and veggies are tender. Add more salt to taste. Serve hot or cool.
