These vegan mashed potatoes are so satisfying. Although they are not the healthiest, they are free from all animal products so you can feel good about sticking with a plant-based diet. We all need the occasional indulgence in our lives and these potatoes are sublime. The added nutritional yeast makes it even tastier. Most importantly, don’t skimp on the vegan butter!
Vegan Mashed Potatoes
Creamy, cheesy, and easy, these mashed potatoes are the ultimate vegan comfort food.
Servings: 4
Ingredients
- 4 potatoes, such as Russet or Yukon Gold
- 1 cup vegan butter
- 1/4 cup unsweetened almond milk
- 1/4 cup nutritional yeast
- Salt and pepper to taste
- Small bunch of chives finely chopped
Instructions
- In a large pot, bring water to a boil
- Wash and peel the potatoes. Cut into quarters.
- Add to boiling water and cook until tender, about 20 to 25 minutes.
- Drain well.
- Place the potatoes back in the pot and add milk, nutritional yeast, and vegan butter. Mash together with a vegetable grinder. Adjust the quantity of milk to obtain a more or less creamy consistency according to your taste.
- Season with salt and pepper and mix well with a spatula. Top with chives.
- Serve hot.
