Banana and melted chocolate crepes

They have some tricks, you must have a mandatory non-stick pan, never
add baking powder or baking soda because the idea is that they are very
thin (if they sponge they are more difficult to handle), and finally,
the mixture should be fluid so you can distribute it throughout the pan,
look for a consistency similar to that of a smoothie.

Ingredients

  • 3/4 cup all-purpose wheat flour
  • 3/4 cup almond milk
  • 1/4 cup water
  • 2 tsp stevia powder
  • 1 banana
  • 1 tsp vanilla essence Optional

For the Filling

  • 1 banana
  • 1/2 cup vegan chocolate drops
  • 2 tbsp coconut oil

Instructions

  • Add all ingredients except the filling ingredients to the blender: wheat flour, almond milk, water, stevia, a banana and vanilla essence. Beat for about three minutes until a homogeneous mixture is obtained.
  • Grease the nonstick skillet, with oil spray or with a napkin moistened with oil. Place it on the stove over medium high heat.
  • When the pan is hot, add approximately one-third cup of the mixture, immediately, lift the pan and swing it up and down, and sideways so that the entire surface is covered with mixture and the pancake is thin enough to be able to fold it.
  • When you notice that the entire surface of the pancake was covered with bubbles, with a kitchen spatula, turn the crepe and cook it for one to two minutes on the other side. Repeat the procedure until the mixture is finished.
  • Melt the chocolate with coconut oil in a water bath. Stir until the mixture is homogeneous. Cut the banana into thin slices.
  • Place the crepes on a plate, and take one to fill it. For aesthetic reasons, you should choose the less golden side to place the filling, on the middle of the pancake place the melted chocolate and some slices of banana. Fold the crepes in half covering the entire filling, and then fold once more on itself, it should be as an envelope one quarter the diameter of the original crepe. Repeat this procedure with all remaining crepes.
  • If you wish, when you have all the crepes armed, heat them for a few seconds in the microwave so that the chocolate is even more melted and enjoy them.

Notes

Regarding the ways of using crepes, this recipe has very little sugar, if you fill them with a sweet taste like chocolate, Nutella or jam you must add a little sweet to the dough. Otherwise, if you choose a salty taste, such as mushrooms, tofu or any of your preference, add just a pinch of sugar and a pinch of salt.
