Slow Cooker Vegan French Toast

- 3 cups cubed stale bread
- ¼ cup vegan butter melted
- ½ cup packed brown sugar
- 1 teaspoon vanilla extract
- 2 teaspoons ground cinnamon
- ½ teaspoon ground nutmeg
- 1 cup almond milk or plant-based alternative
- Toppings: powdered sugar, walnuts, and raspberry syrup
Place bread cubes in large bowl.
In a separate bowl, combine warm vegan butter and brown sugar.
Whisk lightly and then add almond milk, cinnamon, nutmeg and vanilla extract. Mix until well combined.
Pour milk mixture over bread cubes and toss until coated. Pour coated bread into a lightly greased slow cooker.
Cover and cook on low for 4 hours or high for 2 hours.
Let cool slightly before serving. Dust with powdered sugar, walnuts and syrup.
