Slow Cooker Vegan French Toast

Ingredients

  • 3 cups cubed stale bread
  • ¼ cup vegan butter melted
  • ½ cup packed brown sugar
  • 1 teaspoon vanilla extract
  • 2 teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg
  • 1 cup almond milk or plant-based alternative
  • Toppings: powdered sugar, walnuts, and raspberry syrup

Instructions

  • Place bread cubes in large bowl.
  • In a separate bowl, combine warm vegan butter and brown sugar.
  • Whisk lightly and then add almond milk, cinnamon, nutmeg and vanilla extract. Mix until well combined.
  • Pour milk mixture over bread cubes and toss until coated. Pour coated bread into a lightly greased slow cooker.
  • Cover and cook on low for 4 hours or high for 2 hours.
  • Let cool slightly before serving. Dust with powdered sugar, walnuts and syrup.
