Vegan Mac & Cheese
Soy and nut free! Easy, creamy, cheesy, this vegan version of a childhood favorite is perfect for a quick weeknight dinner!

- 1 pound pasta of your choice
- 2
cups finely chopped carrots
- 1 cup cauliflower florets
- 1 cup cubed potatoes peeled
- 1 tablespoon olive oil
- 3 cups
unsweetened plant-based milk - ½ cup
Noochy Licious Nutritional Yeast - 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 1 tablespoon maple syrup
- 1 tablespoon balsamic vinegar
- ½ teaspoon ground turmeric
- Salt and pepper to taste
Bring a large pot of salted water to the boil and cook the pasta as directed. Drain and reserve 1/2 cup of water.
While the pasta is cooking, make the sauce. Steam the carrots, cauliflower and potatoes.
In a blender add the cooked vegetables with pasta water and the rest of the ingredients. Blend until smooth
In a saucepan, cook sauce on medium-high heat for 5 minutes, or until slightly thickened.
Add the pasta. Mix well to combine everything and serve. Add fresh basil, if desired.
