Vegan Mac & Cheese

Soy and nut free! Easy, creamy, cheesy, this vegan version of a childhood favorite is perfect for a quick weeknight dinner!

Ingredients

  • 1 pound pasta of your choice 
  • 2

    cups finely chopped carrots

  • 1 cup  cauliflower florets
  • 1 cup cubed potatoes peeled
  • 1 tablespoon olive oil
  • 3 cups

    unsweetened plant-based milk
  • ½ cup

    Noochy Licious Nutritional Yeast
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 tablespoon maple syrup
  • 1 tablespoon balsamic vinegar
  • ½ teaspoon ground turmeric

  • Salt and pepper to taste

Instructions

  • Bring a large pot of salted water to the boil and cook the pasta as directed. Drain and reserve 1/2 cup of water.
  • While the pasta is cooking, make the sauce. Steam the carrots, cauliflower and potatoes.
  • In a blender add the cooked vegetables with pasta water and the rest of the ingredients. Blend until smooth
  • In a saucepan, cook sauce on medium-high heat for 5 minutes, or until slightly thickened.
  • Add the pasta. Mix well to combine everything and serve. Add fresh basil, if desired.
