There are many vegan renditions of mac and cheese on the web, but most require expensive or hard-to-find ingredients. Our version is quick to prepare and uses pantry staples. Plus, its free of both animal and soy products.
Long-time vegans and newer plant-based eaters will love its rich umami flavor. The cauliflower, carrots, and potatoes are blended to make a creamy sauce, but no one will know its made with vegetables! Nutritional yeast is added to lend a smoky, cheesy flavor to the sauce. The best part? This will only take you 30 minutes to prepare!

Vegan Mac & Cheese
Ingredients
- 1 pound pasta of your choice
- 2
cups finely chopped carrots - 1 cup cauliflower florets
- 1 cup cubed potatoes peeled
- 1 tablespoon olive oil
- 3 cups
unsweetened plant-based milk - ½ cup
Noochy Licious Nutritional Yeast - 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 1 tablespoon maple syrup
- 1 tablespoon balsamic vinegar
- ½ teaspoon ground turmeric
- Salt and pepper to taste
Instructions
- Bring a large pot of salted water to the boil and cook the pasta as directed. Drain and reserve 1/2 cup of water.
- While the pasta is cooking, make the sauce. Steam the carrots, cauliflower and potatoes.
- In a blender add the cooked vegetables with pasta water and the rest of the ingredients. Blend until smooth
- In a saucepan, cook sauce on medium-high heat for 5 minutes, or until slightly thickened.
- Add the pasta. Mix well to combine everything and serve. Add fresh basil, if desired.
