Vegan BBQ Pulled "Pork" Sliders

These meaty sandwiches will have your pork-loving friends fooled! Sticky-sweet, satisfying, and quick to prepare, these vegan sliders are perfect for busy weeknights.

Ingredients

Coleslaw

  • 2 cups shredded cabbage
  • 3 tablespoons vegan mayonnaise
  • 2 tablespoons white vinegar
  • 1 tablespoon sugar
  • Salt and pepper to taste

Jackfruit

  • 1 (20-ounce) can green jackfruit in brine
  • 1 small onion finely diced
  • 1 tablespoon canola oil
  • 1 teaspoon nutritional yeast
  • 1 teaspoon garlic powder
  • 1 teaspoon brown sugar
  • 1 teaspoon paprika
  • ¾ cup BBQ sauce
  • Salt and pepper to taste
  • 8 slider buns

Instructions

Coleslaw

  • Mix all ingredients and store in the refrigerator until ready to eat.

Sliders

  • Drain and rinse the jackfruit. Cut off any hard tips. Partially shred chunks into smaller pieces. 
  • In a cast iron or large skillet, heat oil over medium heat. Add onion and fry until lightly browned, about 5 minutes.
  • Add garlic powder, sugar, nutritional yeast, paprika, and salt and pepper to taste. Stir in jackfruit.
  • Cook for 5 minutes over medium-high heat, stirring occasionally.
  • Add BBQ sauce and ¼ cup water to pan. Let come to a simmer, then cover the pan and cook for 20 to 25 minutes on medium-low heat, stirring often. Use a fork to shred the jackfruit more so it resembles pulled pork. Cook until tender and liquid is absorbed. If it’s too dry, add more sauce; too wet, remove the pan cover.
  • Pile slider buns with BBQ jackfruit and coleslaw.
