Vegan BBQ Pulled "Pork" Sliders

Coleslaw
- 2 cups shredded cabbage
- 3 tablespoons vegan mayonnaise
- 2 tablespoons white vinegar
- 1 tablespoon sugar
- Salt and pepper to taste
Jackfruit
- 1 (20-ounce) can green jackfruit in brine
- 1 small onion finely diced
- 1 tablespoon canola oil
- 1 teaspoon nutritional yeast
- 1 teaspoon garlic powder
- 1 teaspoon brown sugar
- 1 teaspoon paprika
- ¾ cup BBQ sauce
- Salt and pepper to taste
- 8 slider buns
Sliders
Drain and rinse the jackfruit. Cut off any hard tips. Partially shred chunks into smaller pieces.
In a cast iron or large skillet, heat oil over medium heat. Add onion and fry until lightly browned, about 5 minutes.
Add garlic powder, sugar, nutritional yeast, paprika, and salt and pepper to taste. Stir in jackfruit.
Cook for 5 minutes over medium-high heat, stirring occasionally.
Add BBQ sauce and ¼ cup water to pan. Let come to a simmer, then cover the pan and cook for 20 to 25 minutes on medium-low heat, stirring often. Use a fork to shred the jackfruit more so it resembles pulled pork. Cook until tender and liquid is absorbed. If it’s too dry, add more sauce; too wet, remove the pan cover.
Pile slider buns with BBQ jackfruit and coleslaw.
