Sometimes, nothing satisfies like a classic BBQ pulled pork slider. But, how do you remain plant-based while honoring your cravings for a meaty sandwich? Enter jackfruit, hero to health-conscious vegans everywhere!
If you’ve never used jackfruit before in vegan cooking, you’re missing out! When cooked, jackfruit takes on a remarkable meat-like texture that’s perfect for newer plant-based eaters. This is a great sandwich to whip up for a backyard barbecue or when you need an easy vegan weeknight dinner.
Jackfruit is sold whole, but we highly recommend buying canned to save time. If you’re using a whole fruit, know that jackfruit contains latex and is very sticky when cut. You’ll definitely need a bit of oil on your knife and hands before cutting into it.
Other fun facts about jackfruit: it’s the largest fruit in the world and happens to be the national fruit of Bangladesh!
Serve these vegan sliders with mashed potatoes or sweet potato fries for a quick and easy meal!
Vegan BBQ Pulled “Pork” Sliders
Ingredients
Coleslaw
- 2 cups shredded cabbage
- 3 tablespoons vegan mayonnaise
- 2 tablespoons white vinegar
- 1 tablespoon sugar
- Salt and pepper to taste
Jackfruit
- 1 (20-ounce) can green jackfruit in brine
- 1 small onion finely diced
- 1 tablespoon canola oil
- 1 teaspoon nutritional yeast
- 1 teaspoon garlic powder
- 1 teaspoon brown sugar
- 1 teaspoon paprika
- ¾ cup BBQ sauce
- Salt and pepper to taste
- 8 slider buns
Instructions
Coleslaw
- Mix all ingredients and store in the refrigerator until ready to eat.
Sliders
- Drain and rinse the jackfruit. Cut off any hard tips. Partially shred chunks into smaller pieces.
- In a cast iron or large skillet, heat oil over medium heat. Add onion and fry until lightly browned, about 5 minutes.
- Add garlic powder, sugar, nutritional yeast, paprika, and salt and pepper to taste. Stir in jackfruit.
- Cook for 5 minutes over medium-high heat, stirring occasionally.
- Add BBQ sauce and ¼ cup water to pan. Let come to a simmer, then cover the pan and cook for 20 to 25 minutes on medium-low heat, stirring often. Use a fork to shred the jackfruit more so it resembles pulled pork. Cook until tender and liquid is absorbed. If it’s too dry, add more sauce; too wet, remove the pan cover.
- Pile slider buns with BBQ jackfruit and coleslaw.
