Mushroom Bourguignon
Becoming a vegetarian does not mean giving up all the good food we ate before. For almost all dishes, there are good alternatives, which have nothing to envy to the original recipes. I hope I can demonstrate it today by revisiting a traditional recipe of French gastronomy. 
You can serve it with mashed potatoes or pasta which makes it even more comforting and hearty. It honestly has such a delicious, earthy flavor that you can serve it to any carnivore.

Ingredients

  • 3 cups fresh mushrooms
  • 2 carrots
  • 1 onion
  • 3 stalk of celery
  • 1-2 cloves of garlic
  • 1 cup of red wine
  • 1 cup vegetable broth
  • 2 tbsp tomato paste
  • 2 bay leaves
  • 2 tbsp nutritional yeast
  • 1 tsp thyme
  • 2 tbsp cornstarch
  • 3 tbsp extra virgin olive oil
  • Salt
  • Pepper

Instructions

  • N a saucepan heat of olive oil.
  • Add the garlic, the finely chopped onion.
  • Cook for a few minutes on high heat.
  •  Onion should be golden brown.
  • Wash and cut fresh mushrooms in slices.
  •  Lower the heat and add the mushrooms to the pot.
