- 1 (15-oz) can chickpeas drained and rinsed
- ¼ cup unsweetened plant-based milk
- 1 tablespoon miso paste
- 1 teaspoon salt
- 2 tablespoons Noochy Licious Nutritional Yeast
- 2 tablespoons lemon juice
- 2 (10-oz) bags frozen broccoli
- ½ cup breadcrumbs
- ½ cup grated vegan cheese
Preheat the oven to 375˚F.
To make the chickpea cream: add the chickpeas, almond milk, miso, nutritional yeast, lemon juice, and salt to a blender and pulse until smooth and creamy.
To assemble the casserole: put the frozen broccoli into an oven-safe dish. Pour the chickpea cream over the top, then sprinkle with bread crumbs and vegan cheese.
Bake, uncovered, for 30 minutes on the middle rack.
