Ingredients

  • 1 (15-oz) can chickpeas drained and rinsed
  • ¼ cup unsweetened plant-based milk
  • 1 tablespoon miso paste
  • 1 teaspoon salt
  • 2 tablespoons Noochy Licious Nutritional Yeast
  • 2 tablespoons lemon juice
  • 2 (10-oz) bags frozen broccoli
  • ½ cup breadcrumbs
  • ½ cup grated vegan cheese

Instructions

  • Preheat the oven to 375˚F.
  • To make the chickpea cream: add the chickpeas, almond milk, miso, nutritional yeast, lemon juice, and salt to a blender and pulse until smooth and creamy.
  • To assemble the casserole: put the frozen broccoli into an oven-safe dish. Pour the chickpea cream over the top, then sprinkle with bread crumbs and vegan cheese.
  • Bake, uncovered, for 30 minutes on the middle rack.
