Even the healthiest eater among us needs comfort food every once in awhile! The cheesy broccoli casserole is an easy way to stick to a plant-based diet and get some extra veggies in while filling your belly and heart.
What’s in this dish: Chickpeas add a boost of protein and the breadcrumbs add a delicious crunch. Noochy Licious is essential if you want to make it as cheesy tasting as possible. Miso is a great ingredient to give your casserole an umami edge and works really well with the Noochy Licious. Try not to skip it! If you avoid soy products or don’t have miso handy, you can add a teaspoon of soy sauce plus a tablespoon of tahini, the combo of which is equally as salty and creamy as miso.

Cheesy Vegan Broccoli Casserole
Ingredients
- 1 (15-oz) can chickpeas drained and rinsed
- ¼ cup unsweetened plant-based milk
- 1 tablespoon miso paste
- 1 teaspoon salt
- 2 tablespoons Noochy Licious Nutritional Yeast
- 2 tablespoons lemon juice
- 2 (10-oz) bags frozen broccoli
- ½ cup breadcrumbs
- ½ cup grated vegan cheese
Instructions
- Preheat the oven to 375˚F.
- To make the chickpea cream: add the chickpeas, almond milk, miso, nutritional yeast, lemon juice, and salt to a blender and pulse until smooth and creamy.
- To assemble the casserole: put the frozen broccoli into an oven-safe dish. Pour the chickpea cream over the top, then sprinkle with bread crumbs and vegan cheese.
- Bake, uncovered, for 30 minutes on the middle rack.
