Ahhhh, nothing like the night before the weekend. Whether your days off fall on a Saturday/Sunday or another time during the week, waking up to a day without work is a pleasure. A hearty brunch is necessary for those mornings when you lay in bed longer than normal. Enter French toast!
French toast is a classic weekend treat. It usually involves dredging stale bread slices into a sweet milk and egg mixture then pan-frying. The result is a decadent breakfast dish, made even more indulgent with syrup and powdered sugar. Luckily, we found a way to make it vegan!
However, even vegan French toast can be time-consuming to make. We don’t want to spend our free time dredging each slice of bread in a milk-mixture, frying on the stove, and then figuring out a way to keep the cooked slices warm. This slow cooker version makes French toast prep a breeze! Set your alarm and take 10 minutes to prep your breakfast. Then crawl back into bed, and you’ll have a yummy brunch ready soon with almost zero effort!
Serve French toast with scrambled tofu and a side of fruit. Now, that’s a weekend well spent!
Slow Cooker Vegan French Toast
Ingredients
- 3 cups cubed stale bread
- ¼ cup vegan butter melted
- ½ cup packed brown sugar
- 1 teaspoon vanilla extract
- 2 teaspoons ground cinnamon
- ½ teaspoon ground nutmeg
- 1 cup almond milk or plant-based alternative
- Toppings: powdered sugar, walnuts, and raspberry syrup
Instructions
- Place bread cubes in large bowl.
- In a separate bowl, combine warm vegan butter and brown sugar.
- Whisk lightly and then add almond milk, cinnamon, nutmeg and vanilla extract. Mix until well combined.
- Pour milk mixture over bread cubes and toss until coated. Pour coated bread into a lightly greased slow cooker.
- Cover and cook on low for 4 hours or high for 2 hours.
- Let cool slightly before serving. Dust with powdered sugar, walnuts and syrup.
